When I want something fun, quick and just some good ol' protein & veggies, this is my go to.
Peppers make awesome dippers. They are a great alternative to a chip.
A quick food I like to have on hand is boiled eggs. A satisfying instant shot of protein & healthy fat.
And so today we combine them.
Crunchy Egg Salad
- 3 boiled eggs
- 1 T Mayo
- 1/2 T Mustard
- 1/4 C chopped celery
- 1 diced dill pickle spear
Smash it all with a fork, scoop with pepper slices
