Hello holidays! I'll be posting some of my best switch-a-roo recipes leading up to Thanksgiving.
Switch-a-roo: swapping out a high calorie, less healthy, traditional holiday dish with its de-lish, healthier version.
First up! Mashed cauliflower!
Life With Lydia Version: 50 cals, 0 fat, 10 carbs, 4 protein
Traditional mashed potatoes: 1 Cup, 237 Cals, 9 Fat, 35 carbs, 4 protein
Low Calorie & Carb Version
- Head of cauliflower
- Unsweetened almond milk
- Chicken broth
- Garlic powder
- Salt
- Pepper
- Onion
Steam the cauliflower and a bit of onion
Blend when soft with a stick blender and add just a bit of chicken broth WHILE you blend it. Add in spices and almond milk to taste & texture.
High Fat Low Carb Version
- Head of cauliflower
- Heavy whipping cream
- Grass fed butter
- Garlic powder
- Salt
- Pepper
- Onion
- Bacon crumbles (optional)
Steam the cauliflower and a bit of onion
Blend when soft with a stick blender and add in the rest to taste & texture.
Topped with bacon pieces is divine
